D.O.C. means Controlled Denomination of Origin
and it is only for the wines that respect the disciplining
with the D.P.R. 930 of the 12 July 1963. This Decree establishes
a series of limits to for producers which must be respected
as the geographic zone from which the grapes can come, the
characteristics of lands of the vineyards, the cultivation
techniques, the grapewines that they can be employs and
the relative percentages, the maximum yield of grape for
hectare, the yield of grape in wine, the acidity, the dry
extract minimal the alcoholic grading, the eventual possibility
and relative regulation of the wine-making and bottling
outside from the origin zone, the technique and the times
of aging.

D.O.C.G. means Guaranteed and Controlled
Denomination of Origin, it is inserted in the same Degree
of D.O.C. (D.P.R. 930 the 12th of July 1963), and it implements
the laws for this kind of wine (so guaranteed ). Every stocks
are checked, before the trading, by suitable Commissions
to verify all the necessary qualifications of the own laws
of productions. Exceeded these examinations, if it is all
right, some protected and numbered marks from the Ministry
of Agriculture are given to the producers and they will
be then places on the cap and on the cork stopper of each
bottle in such way that are smashed at the moment of the
opening.
